I&#8217;m Njambi \ud83c\udf70<\/strong><\/p>\n\n\n\n<p>I\u2019m so happy you\u2019re here! You can call me Njambi\u2014a self-taught cook and baker with a twist. Believe it or not, I used to <em>hate<\/em> cooking as a child. The kitchen just wasn\u2019t my happy place\u2026 until one unforgettable moment changed everything.  It all started in the year 2000, on my son\u2019s first birthday. I bought a cake from a bakery\u2014excited to celebrate\u2014only to find it was <em>way<\/em> too sweet for my taste. That single bite sparked something in me. I thought, \u201cThere must be a better way.\u201d A few months later, while visiting my in-laws in Sweden, I tasted the most heavenly dessert ever\u2014light, balanced, and made effortlessly. That\u2019s when Aunt Lily took me under her wing and taught me how to bake my very first apple cake. And just like that\u2026 I was hooked.  When I got back home, I dove into a college-level baking book and taught myself the basics\u2014from measuring and mixing to folding and finishing. My love affair with baking had officially begun.  Now, I\u2019m gluten intolerant, so over the years I\u2019ve learned how to tweak classic recipes to fit my dietary needs\u2014without sacrificing flavor. Whether it\u2019s a luscious lemon cake or melt-in-your-mouth cookies, I promise: you won\u2019t miss the gluten!  I love cooking and baking for family and friends, but here\u2019s my little quirk\u2014I rarely measure anything! I just read a recipe, play with it, and make it mine. I use just a few spices, but with the right touch, the flavors come alive.  Now that my kids have flown the nest (and keep calling for recipes of their favorite childhood treats), I figured it\u2019s finally time to write everything down\u2014with real measurements this time!  When I&#8217;m not in the kitchen, you\u2019ll probably find me helping out at an orphanage in Kenya or feeding my endless wanderlust.
